Pots de Creme

Pots de Creme is a rich and unctuous chocolate custard. Try this delicious recipe below:


4 oz. bittersweet chocolate (70%)

2 1/2 TBSP sugar

3 egg yolks

2/3 cup milk

2/3 cup heavy creme


Chop chocolate finely.

Whisk together sugar and yolks until sugar is just dissolved.

Place milk and cream together in a saucepan and heat until just boiled. Allow to cool a few minutes then whisk the hot milk into the yolk and sugar mixture.

Return the entire mix to the saucepan, and cook gently over low heat or a water bath until 180F until when you draw a finger across the back of the spoon it leaves a clear trail.

Remover from the heat and pour 1/2 of the custard over the chopped chocolate. Allow to sit 2 minutes. Stir until smooth. Add the additional custard in two parts, stirring after each addition. 

To make it extra smooth, blend with an immersion blender.

Portion out the chocolate custard in to 4 ramekins, and allow to chill several hours until set.
